Ingredients
  • 1 small butternut squash, peeled, de-seeded and cut into 1.5cm cubes
  • 4 medium sweet potatoes, peeled and cubed
  • 2 tbsp sunflower oil
  • 2 tbsp clear honey
  • 1 small orange, juice of
  • 8 small lamc chops (or 4 large lamb chops)
  • 3 level tbsp Asda Gravy Granules for Meat
  • 2 tsp Asda Mint Sauce
  • Green beans, to serve
Method
  • Pre-heat the oven to 220C/200C Fan/Gas 7. Toss the butternut squash and sweet potatoes in the oil until coated. Spread out evenly in a roasting tin and cook in the oven for 15 minutes.

  • Gently stir in the honey and orange juice and return to the oven for 10 minutes.

  • Meanwhile, grill the lamb chops for 6-8 minutes on each side.

  • Add 300ml boiling water to the gravy granules and stir in the mint sauce.

  • Serve the chops with the roasted vegetables, green beans and mint gravy.
