Ingredients
  • 500g Grower’s Selection British Baby Potatoes
  • 300g Grower’s Selection Shallots
  • 2 carrots
  • 2tsp rapeseed oil
  • 1 lemon
  • 1 lime
  • 4 cloves garlic
  • 2 bay leaves
Method
  • Preheat the oven to 200C/180C Fan/Gas 6.

  • Halve potatoes and shallots. Slice carrots lengthways. Put on a baking tray, drizzle over rapeseed oil and toss to coat.

  • Add the zest of a lemon and of a lime, cloves of garlic and bay leaves. Season with freshly ground black pepper.
