Lemon and lime roasted veg
- 500g Grower’s Selection British Baby Potatoes
- 300g Grower’s Selection Shallots
- 2 carrots
- 2tsp rapeseed oil
- 1 lemon
- 1 lime
- 4 cloves garlic
- 2 bay leaves
Preheat the oven to 200C/180C Fan/Gas 6.
Halve potatoes and shallots. Slice carrots lengthways. Put on a baking tray, drizzle over rapeseed oil and toss to coat.
Add the zest of a lemon and of a lime, cloves of garlic and bay leaves. Season with freshly ground black pepper.
