  • 4 skinless chicken breasts
  • 1 unwaxed lemon, zest and juice of
  • 3 tbsp Asda Clear Honey
  • 1 tbsp fresh thyme
  • 2 tbsp olive oil
  • 4 medium sweet potatoes (or 2 large sweet potatoes)
  • Pre-heat the oven to 190C/170C Fan/Gas 5. Put the chicken breasts in an ovenproof dish in a single layer. Mix the lemon zest and juice with the honey, and brush generously over the chicken breasts. Pour the rest in the dish.

  • Sprinkle with the thyme and drizzle with the olive oil. Season with pepper. Bake in the oven for 25-30 minutes, basting occasionally.

  • Meanwhile, peel the sweet potatoes and cut into even-sized pieces. Add to a pan of boiling water and simmer for 8-10 minutes or until cooked through. Drain and return to the pan. Stand over a very low heat, uncovered, for a few seconds to drive off any excess moisture. Add the butter, season to taste and then mash with a masher or fork.

  • Boil the green beans for 4-5 minutes or just until cooked, then drain.

  • Serve the chicken with the sweet potato mash and tender green beans.
