Ingredients
  • 150g Asda Smart Price Bacon Pieces, chopped
  • 1 onion, chopped
  • 250g carrots, diced
  • 115g red lentils, rinsed
  • 400g can Asda Chopped Tomatoes with Herbs
  • 1 Asda Baguette, 400g
  • 2 tbsp oil
Method
  • Dry-fry half the bacon in a non-stick pan until crisp, then set aside.

  • Put the oil, the rest of the bacon, the onion and the carrots in a pan and cook, covered, over a low heat for 10 minutes, stirring occasionally.

  • Add the lentils, tomatoes and 400ml water. Bring to the boil, cover and simmer for 20 minutes.

  • When cool, purée the soup in a food processor or use a hand blender, then return to the pan, season and heat until simmering, but not boiling.

  • Sprinkle on the crispy bacon pieces and serve with the baguette.
