Ingredients
  • 40g sugar
  • 2 tbsp fresh lime juice
  • Dr. Oetker Gel Food Colour in Lime Green
  • 2 tbsp chopped mint leaves
  • 50ml elderflower cordial
Method
  • Simmer the sugar in 100ml water until dissolved. Take off the heat. Add the lime juice and a little food colouring. Mix well, then pour into an ice-cube tray to fill halfway up. Sprinkle over the mint, then freeze until solid.

  • Mix the elderflower cordial with 75ml water, add to the tray then return to the freezer.
