- 100g white sugar
- 100ml lemon juice
- 15g mint leaves, plus extra sprigs to garnish
- Sparkling water, to top up
- Lemon slices, to garnish
Put the sugar in a pan with 100ml water, bring to the boil and simmer for 3 mins or until the sugar dissolves. Remove from the heat, stir through the lemon juice and allow to cool completely.
Put the syrup in a blender with the mint and plenty of ice. Blitz to a slush, divide between 4 tall glasses and top up with sparkling water. Garnish with the mint sprigs and lemon slices to serve.
