Malibu sparkle with creamy coconut

- 100ml Alpro coconut milk
- Juice and zest 1 lime
- 75ml Malibu
- Prosecco, to top up glasses
In a jug, mix together the coconut milk, lime juice, rum and a handful of ice.
Strain into 6 Champagne flutes then top up with chilled Prosecco. Garnish with fine strands of lime zest.
