Coconut and Malibu make a perfectly tropical cocktail

Malibu sparkle with creamy coconut

  • Serves: 6

  • 100ml Alpro coconut milk
  • Juice and zest 1 lime
  • 75ml Malibu
  • Prosecco, to top up glasses
  • In a jug, mix together the coconut milk, lime juice, rum and a handful of ice.

  • Strain into 6 Champagne flutes then top up with chilled Prosecco. Garnish with fine strands of lime zest.
