Mango and coconut multi-layered fruit cubes
- 2 small mangoes, peeled, stoned and cubed
- 2 tsp lime juice
- 5 tbsp mango juice drink
- 400ml coconut milk
- 2 level tsp icing sugar
Purée the mangoes with the lime juice and mango drink. Spoon into an ice-cube-tray to fill halfway up, then freeze until solid.
Mix the coconut milk with the sugar. Pour over the mango and freeze again.
