Meal Maths: Create your own casserole

A warming, hearty casserole is always a winter favourite, and is so easy to put together.

Create your own version of this fuss-free, adaptable dish by simply adding one of each of the five categories of food listed below to a large heatproof lidded dish. Cover and pop in the oven or on the hob – or just put all the ingredients in a slow cooker. Super simple!

Leave to cook gently to allow the individual flavours to develop, then check all the ingredients are cooked through before serving up your comfort-food classic.

base veg

To start, fry up some classic base veg that will impart flavour throughout.

Then choose a meat or veggie alternative to be the star of your dish.

extra veg

Throw in veg to help towards your 5-a-day and add taste and vibrant colour.

Add earthy flavour and help thicken the dish with beans or lentils.

Pour in wine, ale or a tasty stock to add a depth of rich flavour.

steps to success

  • Frying the base veg very gently in oil over a low heat before adding to the dish helps to bring out extra flavour.
  • Create even more savoury taste by first browning and sealing the meat or veggie alternative quickly in a frying pan on a high heat. This gives it an appetising colour, too.
  • Work out cooking times by following the info on the ingredient packs or comparing with other recipes online. ‘Low and slow’ is best for tougher cuts of meat.
