Mediterranean stuffed peppers

- 500g frozen Scratch Cook Mediterranean Veg Mix in a Herby Dressing
- 500g pack Asda Tomato Passata with Basil
- 120g Asda Greek Feta, cubed
- 4 mixed-colour peppers
- 2tbsp balsamic glaze
Preheat the oven to 200C/180C Fan/Gas 6.
Cook the frozen veg in a large pan until thawed and warmed through. Remove from the heat, then add the passata and feta.
Cut the tops off the peppers and deseed. Put in a roasting dish, fill with the veg mix and put the tops on.
Bake for 25-30 mins until the peppers are tender.
Serve with a drizzle of the balsamic glaze
