Ingredients
  • 500g frozen Scratch Cook Mediterranean Veg Mix in a Herby Dressing
  • 500g pack Asda Tomato Passata with Basil
  • 120g Asda Greek Feta, cubed
  • 4 mixed-colour peppers
  • 2tbsp balsamic glaze
Method
  • Preheat the oven to 200C/180C Fan/Gas 6.

  • Cook the frozen veg in a large pan until thawed and warmed through. Remove from the heat, then add the passata and feta.

  • Cut the tops off the peppers and deseed. Put in a roasting dish, fill with the veg mix and put the tops on.

  • Bake for 25-30 mins until the peppers are tender.

  • Serve with a drizzle of the balsamic glaze
