Ingredients
  • 350g Good & Balanced Mediterranean Vegetables With Cherry Tomatoes
  • 500g Chosen by you Oven Cook Crispy Potatoes
  • 400g pack Chosen by you Cook From Frozen Salmon Fillets
  • 2 tsp olive oil
  • 1 tbsp lemon juice
  • 2 tsp dried oregano
Method
  • Pre-heat the oven to 200C/180C Fan/Gas 6. Put the veg and potatoes on 1 large or 2 small baking trays. Cook for 10 minutes.

  • Remove the tray from the oven then top the veg with salmon.

  • Mix the oil, lemon juice and oregano together. Brush onto the fish, then drizzle the rest over the veg.

  • Cook in the oven for a further 20 minutes.
