Miguel Barclay’s roasted aloo gobi
- ¼ cauliflower, cut into small florets
- 1 potato, cubed
- 2tsp curry powder
- Handful frozen peas
- Handful spinach
- 1tsp olive oil
Preheat your oven to 190C/170 Fan/Gas 5.
Throw the cauliflower into an ovenproof dish along with the potato. Drizzle with the olive oil and sprinkle over the curry powder. Mix together and roast in the oven for 40 mins.
After the 40 mins is up, add the frozen peas, stir them in and roast for a further 5 mins or until they are cooked. Remove from the oven and stir in the spinach, using the heat of the veg to wilt it.
Season with pepper, then serve in the dish or a bowl.
