Miguel Barclay’s salmon mousse
- ½ courgette
- 100g Smart Price Soft Cheese
- 40g Asda Smoked Salmon Trimmings, finely chopped
- 4 thin slices ciabatta, toasted, to serve
Use a potato peeler to slice thin strips of courgette. Line a small dish with clingfilm, followed by the courgette strips.
In a bowl, stir together the soft cheese and smoked salmon and season with black pepper.
Spoon the mixture into the dish and fold the ends of the courgette over to cover. Chill for 1 hr.
Turn out of the dish, remove the clingfilm and slice. Serve with the toasted ciabatta.
