Ingredients
  • 50g sultanas
  • 1tbsp Cointreau
  • 200g porridge oats
  • 1tsp ground cinnamon
  • ½tsp nutmeg
  • 1tsp ground ginger
  • 1 orange, zest only
  • 1 lemon, zest only
  • 500ml semi-skimmed milk
  • 500ml water
  • 3tbsp brown sugar
  • 3tbsp Greek yoghurt
  • 3tbsp brown sugar
  • 3tbsp toasted flaked almonds
Method
  • Soak the sultanas in Cointreau, cover and leave overnight.

  • In a medium saucepan mix the oats, spices, lemon and orange zest, milk and water. Cover with cling film and refrigerate overnight.

  • Strain the sultanas, reserving the Cointreau, and add them to the oats.

  • Gradually warm the porridge over a medium heat, stirring continuously, until it thickens and starts to bubble. Leave for 2-3mins then divide between 6 bowls.

  • Mix the Cointreau through the Greek Yoghurt, divide between the bowls and sprinkle with brown sugar and almonds.
