Ingredients
  • 600g Butcher's Selection Lamb Mince
  • 1-2 garlic cloves, crushed
  • 1 level tsp ground cumin
  • 2 level tsp ground coriander
  • Sunflower oil, to grease
  • 10 Asda Mini White & Wheat Pitta Breads
  • 200g pot Asda Tzatziki
  • Few lettuce leaves, torn
  • 6 cherry tomatoes, sliced
Method
  • Pre-heat the oven to 190C/170C Fan/Gas 5. Mix the lamb with the garlic, cumin and coriander - it's easiest to use your hands. Season to taste.

  • Shape into 20 small oval balls. Lightly grease a baking tray with the sunflower oil. Put the koftas on the tray, leaving a gap between each one, and cook in the oven for 15 minutes. Cool. Keep in the fridge until ready to pack.

  • Just before you pack the picnic, carefully open out the mini pitta breads to make pockets. Put 2 tsp tzatziki, 2 koftas and some lettuce and tomato into each one.

  • Pack the rest of the tzatziki in a small plastic container and serve with a selection of vegetable sticks.
