Ingredients
  • 125g glace cherries
  • 50g marzipan, cut into cubes
  • 25g ground almonds
  • 115g self-raising flour
  • 100g butter, softened
  • 100g caster sugar
  • 2 medium eggs
  • 100g icing sugar
Method
  • Pre-heat the oven to 180C/160C Fan/Gas 4. Grease six holes of a silicon muffin tray. Set aside six whole cherries and half the marzipan. Halve the remaining cherries and mix with almonds, marzipan and 1 tbsp of the flour.

  • Mix together the butter, caster sugar, eggs and remaining flour and beat until creamy.

  • Stir in the cherry and marzipan mixture. Divide between the muffin holes and bake for 20 minutes. Cool on a wire rack.

  • Mix the icing sugar with 2-3 tsp warm water to make icing. Spoon onto the cakes and top with the reserved cherries and marzipan.
