Minted lamb burgers

- 2 red onions
- 2 x 500g packs Butcher’s Selection Lamb Mince
- 4 tbsp chopped mint
- 4 tbsp chopped flat-leaf parsley
- 8 Asda Brioche Buns
- Tzatziki, to serve
- Sliced tomato, to serve
- Baby gem lettuce leaves, to serve
- Thinly sliced red onion, to serve
Finely chop one of the onions and put in a bowl with the mince, mint and parsley. Season and mix together with your hands until just combined.
Shape into 8 burgers. Barbecue or grill for 10 mins, turning occasionally, until the meat is completely cooked through.
Split the brioche buns and toast the cut sides on the barbecue or under the grill. Fill with a burger topped with tzatziki, tomato, lettuce and red onion.
