Mixed pepper and rocket pan-fried gnocchi
- 1tbsp rapeseed oil
- 500g gnocchi
- 3 cloves garlic, thinly sliced
- 125g cherry tomatoes
- 300g frozen sliced mixed peppers
- ½ jar Sacla Reduced Fat Tomato Pesto
- 25g grated Parmesan
- 1 x 60g pack Asda Strong Wild Rocket
Heat the oil in a pan over a medium-high setting. Add the gnocchi and cook for 5 mins until golden and chewy. Add the garlic, cherry tomatoes and frozen peppers and fry for 5-6 mins until the peppers are cooked and tender and the tomatoes are bursting.
Add the tomato pesto to the pan and stir until heated through.
Sprinkle the Parmesan and the rocket on top of the gnocchi to serve.
