Ingredients
  • 1tbsp rapeseed oil
  • 500g gnocchi
  • 3 cloves garlic, thinly sliced
  • 125g cherry tomatoes
  • 300g frozen sliced mixed peppers
  • ½ jar Sacla Reduced Fat Tomato Pesto
  • 25g grated Parmesan
  • 1 x 60g pack Asda Strong Wild Rocket
Method
  • Heat the oil in a pan over a medium-high setting. Add the gnocchi and cook for 5 mins until golden and chewy. Add the garlic, cherry tomatoes and frozen peppers and fry for 5-6 mins until the peppers are cooked and tender and the tomatoes are bursting.

  • Add the tomato pesto to the pan and stir until heated through.

  • Sprinkle the Parmesan and the rocket on top of the gnocchi to serve.
