Mushroom & egg toastie

- 50g mushrooms
- 25g butter
- 1 large free-range egg
- 1 tbsp milk
- 2 slices Asda Bakers Gold white bread
- 1 dollop brown sauce (or ketchup)
Pre-heat the grill. Carefully slice the mushrooms and put in a frying pan with 2 tsp of the butter. Cook over a medium heat, stirring occasionally, until they start to brown and shrink.
While the mushrooms are cooking, lightly beat the egg and milk together in a bowl. Melt 2 tsp of the butter in a pan, add the egg mixture and cook over a low heat, stirring all the time, until scrambled.
Spread one slice of bread with brown sauce or ketchup. Top with the mushrooms and the egg, then put the other slice of bread on top.
Thinly slice the rest of the butter on the outside of the bread. Grill the sandwich until crisp and golden all over.
