- 1 large red onion, finely sliced
- 500g mushrooms, thickly sliced
- 1 pack Asda Stroganoff Sauce Mix
- 300ml semi-skimmed milk
- 100g Smart Price Cashews
- 250g Asda Long Grain Rice
- 1 tsp oil
Fry the onion in the oil over a medium heat until soft. Add the mushrooms and cook until soft, then increase the heat and cook until most of the liquid has been reduced.
Combine the sauce mix with the milk and add to the pan. Heat until simmering, stirring often, then simmer for a further 4-5 minutes, stirring occasionally.
Toast the cashews by tossing them in a hot, dry pan, then stir into the stroganoff.
Cook the rice according to pack instructions and serve with the stroganoff.
