Ingredients
  • 1 large red onion, finely sliced
  • 500g mushrooms, thickly sliced
  • 1 pack Asda Stroganoff Sauce Mix
  • 300ml semi-skimmed milk
  • 100g Smart Price Cashews
  • 250g Asda Long Grain Rice
  • 1 tsp oil
Method
  • Fry the onion in the oil over a medium heat until soft. Add the mushrooms and cook until soft, then increase the heat and cook until most of the liquid has been reduced.

  • Combine the sauce mix with the milk and add to the pan. Heat until simmering, stirring often, then simmer for a further 4-5 minutes, stirring occasionally.

  • Toast the cashews by tossing them in a hot, dry pan, then stir into the stroganoff.

  • Cook the rice according to pack instructions and serve with the stroganoff.
