No-churn mince pie ice cream
- 200g pack Asda 50% Less Fat Light Original Soft Cheese
- 1tsp vanilla extract
- 397g can condensed milk
- 4 mince pies, chopped, plus 2 extra to serve
- 300ml fresh whipping cream
Mix together the soft cheese and vanilla with an electric whisk until thick and creamy.
Add the condensed milk to the mixture, then whisk for 2-3 mins until thickened. Add the chopped mince pies and stir to just combine.
In a separate bowl, whip the cream until soft peaks form, then fold into the soft cheese mixture to combine.
Pour the ice cream mixture into a lidded freezer proof container then even out the top. Cover with the lid and freeze for at least 6 hrs, preferably overnight.
To serve, scoop the ice cream into glasses and top with pieces of the extra mince pies.
