Ingredients
  • 1 avocado
  • 75g dark brown sugar
  • 60g cocoa, plus extra to dust (optional)
  • 150g ground almonds
  • 100ml maple syrup
  • 60g smooth peanut butter
  • 1tsp vanilla extract
  • 1 large egg, beaten
Method
  • Preheat the oven to 180C/160C Fan/Gas 4. Line a rectangular tin with baking paper.

  • Scoop the flesh out of the avocado, discarding the skin and stone. Mash or blend the flesh until smooth.

  • Mix the avocado with all the other ingredients until well combined. Pour into the baking tray, smooth the top and bake for 30 mins or until a knife inserted into the middle comes out clean.

  • Leave to cool, cut into 18 squares and sprinkle with cocoa powder (optional).
