Ingredients
  • 1 tbsp rapeseed oil
  • 600g Asda Frozen Mixed Vegetables
  • 3cm piece root ginger
  • 2 red onions
  • 1 green chilli
  • 1 tsp turmeric
  • 6 cardamom pods
  • 20g sultanas
  • 2 tbsp Balti curry paste
  • 300g basmati rice
  • 1 reduced-salt vegetable stock cube
  • 3 spring onions
  • 2 tbsp chopped coriander
  • 2 tbsp toasted almonds
Method
  • Heat 1tbsp rapeseed oil in a large pan.

  • Add 600g Asda Frozen Mixed Vegetables, a 3cm piece root ginger, finely grated, 2 red onions, sliced, 1 green chilli, deseeded and finely chopped, 1tsp turmeric, 6 cardamom pods, cracked, and 20g sultanas.

  • Cook for 5 mins until the onions are softened but not browned.

  • Stir through 2tbsp Balti curry paste, 300g basmati rice and 1 reduced-salt vegetable stock cube. Top up with 800ml boiling water.

  • Stir to combine, cover with a tight-fitting lid, bring to the boil then simmer gently for 5 mins.

  • Turn off the heat and leave to stand, covered, for 20 mins.

  • Remove the lid and use a fork to stir up the rice grains, then mix through 3 spring onions, finely sliced.

  • Garnish with 2tbsp chopped coriander and 2tbsp toasted almonds, then serve immediately.
