Ingredients
  • 600g baby potatoes
  • 100ml chicken stock
  • 50g butter
Method
  • Pre-heat the oven to 220C/200C Fan/Gas 7. Put the baby potatoes in a roasting tin with the stock and butter. Cover with foil and cook in the oven for 20 minutes.

  • Remove the foil. Return the roasting tin to the oven and cook for a further 15-20 minutes or until the potatoes are tender and golden brown and all the stock has evaporated.
