- 50ml tequila
- 1tbsp demerara sugar
- ½ lime
- 1 wedge pink grapefruit
- 200ml grapefruit juice, chilled
- 50ml sparkling water, chilled
Pour a splash of tequila on a plate and sprinkle the sugar on a separate plate. Dip the rim of a tall glass in the tequila and then the sugar – swirl the glass until the rim is coated in sugar.
Place the grapefruit wedge and a slice of lime in the glass.
Squeeze the juice of the remaining lime into the glass, then add the remaining tequila, sugar and grapefruit juice. Stir until the sugar has dissolved. Top up with the sparkling water and serve immediately.
