Ingredients
  • 1 tsp olive oil
  • 130g pack diced chorizo
  • 150g pack baby button mushrooms, sliced
  • 200g pack Merchant Gourmet Whole Chestnuts, chopped
  • 6 tsp balsamic vinegar
  • 200g baby spinach leaves
  • 3 tbsp chopped parsley
Method
  • Heat the oil in a pan and add the chorizo. Fry for 2 minutes.

  • Add the mushrooms and cook for 3 minutes, stirring.

  • Add the chestnuts and vinegar. Cook for a further 5 minutes. Stir in the spinach leaves until just wilted. Stir in the parsley and serve.
