Pan-fried chorizo, chestnuts & mushrooms
- 1 tsp olive oil
- 130g pack diced chorizo
- 150g pack baby button mushrooms, sliced
- 200g pack Merchant Gourmet Whole Chestnuts, chopped
- 6 tsp balsamic vinegar
- 200g baby spinach leaves
- 3 tbsp chopped parsley
Heat the oil in a pan and add the chorizo. Fry for 2 minutes.
Add the mushrooms and cook for 3 minutes, stirring.
Add the chestnuts and vinegar. Cook for a further 5 minutes. Stir in the spinach leaves until just wilted. Stir in the parsley and serve.
