Paprika sweet potatoes
- 1 clove garlic, crushed
- 200g Smart Price Low Fat Natural Yogurt
- 2½tsp smoked paprika
- 2tbsp olive oil
- 1tsp mild chilli powder
- 1.5kg Grower’s Selection Sweet Potatoes, peeled and cut into 2cm chunks
Preheat the oven to 200C/180C Fan/Gas 6.
Mix the garlic with the yogurt and tsp of the smoked paprika. Cover and chill until required.
Mix the olive oil, chilli powder and remaining smoked paprika in a large bowl, then add the sweet potato chunks. Toss to coat all evenly in the oil.
Spread the sweet potato chunks out on a baking tray and roast in the oven for 50-60 mins until cooked through and browned, turning the pieces over halfway through. Serve warm with some of the yogurt drizzled over and the rest served on the side.
