Ingredients
  • 1 clove garlic, crushed
  • 200g Smart Price Low Fat Natural Yogurt
  • 2½tsp smoked paprika
  • 2tbsp olive oil
  • 1tsp mild chilli powder
  • 1.5kg Grower’s Selection Sweet Potatoes, peeled and cut into 2cm chunks
Method
  • Preheat the oven to 200C/180C Fan/Gas 6.

  • Mix the garlic with the yogurt and tsp of the smoked paprika. Cover and chill until required.

  • Mix the olive oil, chilli powder and remaining smoked paprika in a large bowl, then add the sweet potato chunks. Toss to coat all evenly in the oil.

  • Spread the sweet potato chunks out on a baking tray and roast in the oven for 50-60 mins until cooked through and browned, turning the pieces over halfway through. Serve warm with some of the yogurt drizzled over and the rest served on the side.
