- 2tbsp sunflower oil
- 1 clove garlic, crushed
- 2 large parsnips, peeled and chopped
- 1 apple, cored and grated
- tsp nutmeg
- 200g Greek yogurt
- 4tbsp mixed nuts, toasted and chopped
Heat the oil in a saucepan and cook the garlic, parsnips and apple for 5 mins over a low heat. Add 100ml boiling water and simmer gently, uncovered, for 15 mins.
Blitz with a handheld blender and stir in the nutmeg and yogurt. Return to the pan and gently heat through. Top with the nuts and serve with your choice of crudites.
