Ingredients
  • 2tbsp sunflower oil
  • 1 clove garlic, crushed
  • 2 large parsnips, peeled and chopped
  • 1 apple, cored and grated
  • tsp nutmeg
  • 200g Greek yogurt
  • 4tbsp mixed nuts, toasted and chopped
Method
  • Heat the oil in a saucepan and cook the garlic, parsnips and apple for 5 mins over a low heat. Add 100ml boiling water and simmer gently, uncovered, for 15 mins.

  • Blitz with a handheld blender and stir in the nutmeg and yogurt. Return to the pan and gently heat through. Top with the nuts and serve with your choice of crudites.
