Ingredients
  • 300g short pasta (try Extra Special Mezzi Paccheri)
  • 300g pack Grower’s Selection Cooked Beetroot, drained and cut into chunks
  • 80g Asda Light Greek Salad Cheese, crumbled
  • 70g pack Grower’s Selection Strong Wild Rocket
Method
  • Cook the pasta according to the pack instructions. Drain well and return to the pan.

  • Cut the beetroots into 2cm chunks and add to the pan. Stir into the pasta – gently so you don’t squash or break it up – until the pasta turns pink.

  • Sprinkle with the Greek salad cheese and rocket.

  • Season with a grind of fresh black pepper and serve.
