Pasta with beetroot & Greek salad cheese
- 300g short pasta (try Extra Special Mezzi Paccheri)
- 300g pack Grower’s Selection Cooked Beetroot, drained and cut into chunks
- 80g Asda Light Greek Salad Cheese, crumbled
- 70g pack Grower’s Selection Strong Wild Rocket
Cook the pasta according to the pack instructions. Drain well and return to the pan.
Cut the beetroots into 2cm chunks and add to the pan. Stir into the pasta – gently so you don’t squash or break it up – until the pasta turns pink.
Sprinkle with the Greek salad cheese and rocket.
Season with a grind of fresh black pepper and serve.
