Pasta with roasted butternut squash
- 1 butternut squash
- 1 onion, chopped
- 150g mushrooms, sliced
- 2 tsp Asda Smart Price
- Dried Mixed Herbs
- 300g Asda Penne Pasta
- 125g Asda Lancashire Cheese, crumbled
- 2 tbsp oil
Pre-heat the oven to 200C/180C Fan/Gas 6. Peel the squash, de-seed and cut the flesh into 3cm pieces. Toss in 1 tbsp oil, spread on a baking tray and bake for 30 minutes.
Fry the onion in the rest of the oil until soft. Add the mushrooms and herbs and cook, stirring, until soft.
Cook the pasta according to pack instructions. Drain and toss with the butternut squash, mushroom mixture and Lancashire cheese.
