  • 400g frozen peas
  • 50g plain flour
  • 50g Parmesan, grated
  • 100g Chosen by you Mozzarella Soft & Mild Grated Cheese
  • 2 spring onions, trimmed and sliced
  • 3tbsp chopped fresh parsley
  • 3tbsp chopped fresh basil
  • 1 large egg, beaten
  • 4tbsp olive oil
  • 4 eggs, poached
  • Simmer the peas in a large pan of boiling water for 5 mins. Drain and cool. Mash the peas with a fork or potato masher.

  • Add the flour, Parmesan, mozzarella, spring onions, herbs and egg to the peas and mix well. Shape into 12 patties.

  • Heat a little of the oil in a pan and fry the fritters in batches until golden. Drain on kitchen paper.

  • Stack 4 fritters per portion on warm plates and serve with a poached egg on top of each.
