Ingredients
  • 2 Grower’s Selection Ready To Eat Peaches, halved and destoned
  • 150g asparagus, trimmed
  • 1tsp rapeseed oil
  • 2tbsp pine nuts
  • 225g Asda 40% Less Fat Halloumi, sliced
  • 100g baby spinach
  • ½ pack salad cress
  • 1tbsp pomegranate sauce
Method
  • Preheat the oven to 200C/180C Fan/Gas 6. Arrange the peach halves on a baking tray with the asparagus, drizzle with the oil and cook for 12 mins. Add the pine nuts to the tray after 9 mins.

  • Heat a nonstick frying pan on high, then dry-fry the halloumi for 1-2 mins on each side until golden

  • Add the halloumi to the spinach and cress, and mix in the peaches, asparagus and pine nuts. Drizzle with the pomegranate sauce, season with a sprinkle of black pepper and serve.
