Peach, passion fruit & crème fraîche smash toast
- 1 peach
- Extra Special All-Butter Brioche Loaf
- 1tbsp reduced-fat crème fraîche
- 50ml Extra Special Mango & Lime Coulis
- 1 passion fruit
Heat a nonstick griddle or frying pan over a high heat. Destone the peach and cut into 8 slices. Griddle for 1 min on each side until charred lines appear. Set aside.
Toast 2 x 1cm-thick slices of brioche until golden.
Spread the crème fraîche evenly over the toast and top with the peach slices.
Drizzle with coulis. Cut the passion fruit in half, scoop out the seeds and sprinkle on top.
