Vegan Peanut butter cookies
- 200g crunchy peanut butter
- 100g maple syrup, plus extra to drizzle
- 175g porridge oats
Preheat the oven to 200C/180C Fan/Gas 6. Line 2 baking trays with baking paper.
In a large bowl, stir together the peanut butter and maple syrup until smooth. Mix in the oats until well coated.
Divide the mixture into 8 pieces and, with wet hands, roll into balls. Arrange on the baking trays, then use a fork to flatten the cookies and create a pattern on top.
Bake the cookies for 15-18 mins, until turning brown at the edges. Leave on the baking trays to cool fully, then drizzle with a little extra maple syrup before serving.
