Ingredients
  • 613g pack Asda Butcher's Selection Chicken Breast Fillets
  • 130g pot Asda Basil Pesto (chilled), or use pesto from a jar
  • 75g fresh breadcrumbs
  • 500g pack Asda Mediterranean Vegetables with Cherry Tomatoes (frozen), cooked as packed instructions, and new potatoes with parsley, to serve
Method
  • Pre-heat the oven to 190C/170C Fan/Gas 5. Line a baking tray with baking paper. Using a sharp knife, cut each chicken breast in half through the middle to make 2 thinner pieces. Put on the baking tray.

  • Spread the pesto thickly on the chicken fillets and sprinkle over the breadcrumbs, pressing down lightly.

  • Bake for 15 minutes or until the meat is cooked through, so the juices run clear.

  • Serve the chicken with the Mediterranean vegetables and new potatoes.
