Pimm’s fruit cup
  • Cook: 5 Mins
    Plus 30 mins standing

  • Serves: 4

  • 200ml Pimm's
  • 600ml sparkling lemonade
  • 10 mint sprigs
  • 4 strawberries thinly sliced
  • ½ orange, thinly sliced
  • 10 slices cucumber, halved
  • Ice to serve
  • Put all the ingredients except the ice in a jug. Stir well and leave to stand for 30 minutes.

  • Pour into ice filled glasses making sure the fruit is equally divided between the glasses. Serve immediately.

  • TIP: You can make your own Pimm's by mixing together 100ml sweet sherry, 200ml sweet vermouth, 280ml gin and 100ml Cointreau. Mix 1 part with 3 parts lemonade or substitute some of the lemonade for orange juice for a Sangria style aperitif.
