Ingredients
  • 300ml Pimm's, chilled
  • 850ml diet lemonade, chilled
  • 1 orange, zested
  • 300g strawberries, cut in half
  • ¼ cucumber, sliced
  • 2 sprigs mint, leaves picked
Method
  • In a large jug, mix the Pimm's, lemonade and orange zest together.

  • Divide the strawberries, cucumber and mint between 10-12 lolly moulds.

  • Pour over the Pimm's mix, insert the lolly stick and freeze for 2-3hours or until frozen solid.

  • When you’re ready to serve the lollies, dip the mould in a bowl of hot water for 2 seconds and gently slide the lolly out.
