Pimm’s ice lollies
- 300ml Pimm's, chilled
- 850ml diet lemonade, chilled
- 1 orange, zested
- 300g strawberries, cut in half
- ¼ cucumber, sliced
- 2 sprigs mint, leaves picked
In a large jug, mix the Pimm's, lemonade and orange zest together.
Divide the strawberries, cucumber and mint between 10-12 lolly moulds.
Pour over the Pimm's mix, insert the lolly stick and freeze for 2-3hours or until frozen solid.
When you’re ready to serve the lollies, dip the mould in a bowl of hot water for 2 seconds and gently slide the lolly out.
