Pimm’s & strawberry granita
- 100g granulated sugar
- 1/2 orange, zest of
- 1 unwaxed lemon, zest of
- 400g fresh strawberries
- 3 tbsp orange juice
- 2 tbsp lemon juice
- 100ml Pimm's No. 1 (or Asda Summer Punch)
Put a shallow, rectangular container, preferably metal or Pyrex, in the freezer.
Heat the sugar with 200ml water in a pan and simmer for 2 minutes. Remove from the heat and add the zests, leave to cool.
Hull the strawberries and purée with the orange and lemon juices. Discard the zest from the syrup. Mix the Pimm's or summer punch and the strawberry purée. Pour into the chilled container and freeze for 30 minutes.
Stir with a fork; freeze for another 30 minutes. Stir again, scraping down the sides, to break up ice crystals. Carry on stirring every 30 minutes for 3-4 hours, until the mixture has the texture of crushed ice.
