Pimm’s summer pudding slice
- 1 Baker’s Selection All Butter Madeira Cake
- 4 Dr. Oetker Platinum Grade Leaf Gelatine
- 150ml Pimm’s No.1
- 350ml lemonade
- 200g strawberries, sliced
- 150g raspberries
- 250g Frozen for Freshness Summer Fruits
- 75g caster sugar
- 3tbsp lemon juice
Line a 24cm loaf tin with clingfilm. Trim the crust from the cake, then cut into 10 slices. Use to line the tin, packing it into all the gaps – take care not to squash it.
Soak the gelatine in cold water for 5 mins. Drain, then put in a bowl with 3tbsp boiling water. Stir to dissolve. Stir in the Pimm’s, lemonade, strawberries and raspberries.
Pour into the cake-lined tin and chill until set.
Heat the summer fruits, sugar and lemon juice gently in a pan until the sugar dissolves. Boil then simmer for 5 mins, stirring, until the berries burst. Let the sauce cool to room temperature, then put in the fridge to chill completely.
Turn the pudding out on to a plate. Brush with the sauce, then serve with a drizzle of extra sauce.
