Ingredients
  • 300g Asda Fat Free Cottage Cheese with Pineapple, plus extra to serve
  • 3 medium eggs
  • 40g porridge oats
  • 1tsp vanilla extract
  • 125g plain flour, sifted
  • 1tsp baking powder
  • 150g fresh berries, such as blueberries, raspberries and strawberries
  • 4tbsp maple syrup
  • Mint leaves, to garnish
Method
  • Blitz the cottage cheese with the eggs, oats and vanilla in a processor. Pour into a bowl and stir in the flour and baking powder.

  • Heat a nonstick frying pan over a medium setting. Add 2tbsp batter per pancake and cook for 2-3 mins each side, flipping carefully so they don’t break. Keep warm. Repeat with the remaining batter to make 12 pancakes.

  • Serve the pancakes on a platter, topped with the berries, maple syrup and mint, and with the extra pineapple cottage cheese on the side.
