Pineapple Cottage cheese pancakes

- 300g Asda Fat Free Cottage Cheese with Pineapple, plus extra to serve
- 3 medium eggs
- 40g porridge oats
- 1tsp vanilla extract
- 125g plain flour, sifted
- 1tsp baking powder
- 150g fresh berries, such as blueberries, raspberries and strawberries
- 4tbsp maple syrup
- Mint leaves, to garnish
Blitz the cottage cheese with the eggs, oats and vanilla in a processor. Pour into a bowl and stir in the flour and baking powder.
Heat a nonstick frying pan over a medium setting. Add 2tbsp batter per pancake and cook for 2-3 mins each side, flipping carefully so they don’t break. Keep warm. Repeat with the remaining batter to make 12 pancakes.
Serve the pancakes on a platter, topped with the berries, maple syrup and mint, and with the extra pineapple cottage cheese on the side.
