- 200g Asda Ready Prepared Pineapple
- 6 Asda Extra Special Mini Meringues
- 100ml whipping cream
- 1 tbsp orange liqueur (optional)
Cut each piece of pineapple into three pieces and gently break up the meringues with your hands into chunky pieces – don’t be rough or you’ll reduce them to powder.
Put the cream, orange liqueur, if using, and any juice from the pineapple pack into a bowl and whisk with a wire whisk or an electric hand whisk (on slow speed) until it forms soft, floppy peaks. Watch carefully and don’t whisk beyond that stage.
Stir in the pineapple and meringue and spoon into 2 glasses. Cover and chill for 1-8 hours.
