Ingredients
  • 1 Chosen by you frozen Chicken Breast Fillet
  • 1 tbsp sunflower oil
  • 1 level tsp Chosen by you Piri Piri Seasoning
  • 1 baking potato, about 225g
  • 1 level tsp smoked paprika
  • Salad, to serve
  • Chosen by you Light Mayonnaise, to serve
Method
  • Pre-heat the oven to 200C/180C Fan/Gas 6. Brush the chicken with 1 tsp oil and put in the middle of a sheet of baking paper. Sprinkle the piri piri seasoning all over the fillet. Fold the paper to make a parcel, with tightly sealed edges but room inside for the air to circulate. Put on one end of a baking tray.

  • Cut the potato into wedges. Put in a bowl and toss with the paprika and the rest of the oil. Spread the wedges over the other half of the baking tray.

  • Cook in the oven for 25 minutes. Remove and open the paper parcel, taking care the steam doesn't burn your fingers. Return to the oven and cook for another 10-15 minutes until the chicken and wedges are golden.

  • Slice the chicken and serve with the wedges, salad and mayonnaise.
