Ingredients
  • 2 Grower’s Selection Plantain, thinly sliced horizontally
  • 1tsp rapeseed oil
  • 1tsp cayenne pepper
  • 3tbsp light mayonnaise
  • 1tsp mild curry powder
  • Juice ½ lime
Method
  • Preheat the oven to 180C/160C Fan/Gas 4. Line a baking tray with baking paper.

  • Arrange the plantain slices on the tray in an even layer, drizzle with oil and sprinkle on the cayenne pepper. Bake in the oven for about10-15 mins until crisp.

  • Mix the mayonnaise, curry powder and lime together until well combined. Serve with the chips.
