Plum, rocket and mozzarella salad with a tangy dressing
- 4 Grower's Selection Ready to Eat Plums, stoned and thinly sliced
- 2 shallots, peeled and thinly sliced
- 60g pack Asda Strong Wild Rocket
- 10g basil, leaves torn
- 1tsp coarse-grain mustard
- Juice ½ orange
- 2tbsp extra virgin olive oil
- 125g pack Asda Light Mozzarella, drained and torn
- 20g pumpkin seeds
In a large bowl, toss together the plums, shallots, rocket and basil.
For the dressing, stir together the mustard, orange juice and olive oil. Season well with ground black pepper.
Drizzle the dressing over the salad then toss well to coat. Transfer to a serving plate and scatter over the mozzarella. Sprinkle with the pumpkin seeds to serve.
