Ingredients
  • 4 Grower's Selection Ready to Eat Plums, stoned and thinly sliced
  • 2 shallots, peeled and thinly sliced
  • 60g pack Asda Strong Wild Rocket
  • 10g basil, leaves torn
  • 1tsp coarse-grain mustard
  • Juice ½ orange
  • 2tbsp extra virgin olive oil
  • 125g pack Asda Light Mozzarella, drained and torn
  • 20g pumpkin seeds
Method
  • In a large bowl, toss together the plums, shallots, rocket and basil.

  • For the dressing, stir together the mustard, orange juice and olive oil. Season well with ground black pepper.

  • Drizzle the dressing over the salad then toss well to coat. Transfer to a serving plate and scatter over the mozzarella. Sprinkle with the pumpkin seeds to serve.
