Ingredients
  • 2 large eggs
  • 2 ripe avocados, peeled and destoned
  • 1tsp lime juice
  • 2 thick slices Extra Special Sourdough Boule
  • 2tsp olive oil
  • Handful of watercress
  • Cress, to garnish
  • 1 chopped red chilli
Method
  • Poach the eggs.

  • Mash the avocados with the lime juice.

  • Brush the sourdough slices with the olive oil.

  • Toast on both sides under a hot grill. Spread the mashed avocado on the toast, then top each slice with a poached egg.

  • Season with ground black pepper and serve garnished with cress and chopped red chilli.
