Poached egg on avocado toast

- 2 large eggs
- 2 ripe avocados, peeled and destoned
- 1tsp lime juice
- 2 thick slices Extra Special Sourdough Boule
- 2tsp olive oil
- Handful of watercress
- Cress, to garnish
- 1 chopped red chilli
Poach the eggs.
Mash the avocados with the lime juice.
Brush the sourdough slices with the olive oil.
Toast on both sides under a hot grill. Spread the mashed avocado on the toast, then top each slice with a poached egg.
Season with ground black pepper and serve garnished with cress and chopped red chilli.
