Pomegranate watercress salad
- 170g watercress
- 200g radishes, sliced
- 2 pomegranates, seeds separated
- 25g flat leaf parsley, chopped
- Juice of 2 lemons
- 2 tbsp apple cider vinegar
- 1 tbsp olive oil
- 1 tsp sumac
- 1 tbsp honey
Put the watercress, radishes, pomegranate seeds and parsley into a serving bowl and toss together.
Stir the lemon juice, vinegar, oil, sumac and honey together until combined and drizzle over the top of the salad.
