Ingredients
  • 1tsp ground cinnamon
  • ½ tsp ground nutmeg
  • 2tbsp brown sugar
  • 2tbsp maple syrup
  • 6 Bramley apples (each peeled, halved and cored)
  • Sprigs of thyme
  • 1kg rindless pork loin
  • Mash (optional)
  • Green beans (optional)
Method
  • Preheat the oven to 180C/160C Fan/Gas 4. Mix together the spices, sugar and syrup; coat the apples in the mixture.

  • Put the pork in the middle of a large baking tray, with the apples around the edges, and bake for 1 hr 30 mins. Allow to rest on a board for 10 mins, then garnish with the thyme. Mash the apples in a bowl to make a sauce.

  • Slice the meat and serve with the apple sauce, plus mashed potatoes and beans, if you like.
