Pork with ratatouille
- 2 tbsp olive oil
- 1 large onion, chopped
- 1 garlic clove, crushed
- 1 aubergine, cut into 1cm cubes
- 2 peppers (1 red and 1 yellow), de-seeded and sliced
- 3 courgettes, cut into 1cm slices
- 300g tomatoes, chopped
- 1 tsp dried oregano
- 660g pack Asda Butcher's Selection Pork Loin Steaks
- Crusty bread, to serve
Heat the oil in a large saucepan and cook the onion over a medium heat, stirring often, until it's soft but not coloured. Add the garlic and cook for another minute.
Add the aubergine, peppers and courgettes and cook, stirring for another 3-4 minutes. Add the tomatoes and oregano, then season with pepper. Cook, stirring, for another 3-4 minutes until the tomatoes break down.
Add 2 tbsp water and cook over a low heat, stirring often, for 20-25 minutes.
Cook the pork in a griddle pan for 10 minutes until cooked through, turning occasionally.
Serve with the ratatouille and crusty bread.
