Ingredients
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 1 garlic clove, crushed
  • 1 aubergine, cut into 1cm cubes
  • 2 peppers (1 red and 1 yellow), de-seeded and sliced
  • 3 courgettes, cut into 1cm slices
  • 300g tomatoes, chopped
  • 1 tsp dried oregano
  • 660g pack Asda Butcher's Selection Pork Loin Steaks
  • Crusty bread, to serve
Method
  • Heat the oil in a large saucepan and cook the onion over a medium heat, stirring often, until it's soft but not coloured. Add the garlic and cook for another minute.

  • Add the aubergine, peppers and courgettes and cook, stirring for another 3-4 minutes. Add the tomatoes and oregano, then season with pepper. Cook, stirring, for another 3-4 minutes until the tomatoes break down.

  • Add 2 tbsp water and cook over a low heat, stirring often, for 20-25 minutes.

  • Cook the pork in a griddle pan for 10 minutes until cooked through, turning occasionally.

  • Serve with the ratatouille and crusty bread.
