Ingredients
  • 100g ciabatta
  • 1/2 unwaxed lemon, finely grated zest of
  • 1/2 tsp smoked paprika
  • Pinch of cayenne pepper
  • Pinch of salt
  • 1 large free-range egg
  • 1 tbsp olive oil
  • 15g butter, melted
  • 3 tbsp flour
  • 4 x 125g pieces line caught cod loin
  • 4 Asda Deli Ciabatta Rolls
  • Salad leaves, to serve
  • Mayonnaise, to serve
Method
  • Pre-heat the oven to 200C/180C Fan/Gas 6. Break the 100g ciabatta into bits and put in a processor with the lemon zest, smoked paprika, cayenne pepper and salt. Whizz into fine crumbs and then put in a shallow dish.

  • Lightly beat the egg, olive oil and melted butter together and put in another shallow dish. Put the flour on a plate.

  • Take the cod and coat one piece in the flour, shaking off any excess. Dip it in the egg mixture, then the crumbs, patting the crumbs on firmly. Put on a baking tray and repeat with the other pieces of fish. Discard any leftover crumb mixture.

  • Cook for 15-20 minutes until crisp and golden brown.

  • Split the ciabatta rolls in half and fill with the fish, salad leaves and mayonnaise.
