- 8 smallish potatoes
- 2 tbsp olive oil
- 1 tsp paprika
- 1 tsp Herbes de Provence
Pre-heat the oven to 190C/170C Fan/Gas 5. Boil the potatoes in their skins for 20 minutes or until just tender. Drain and transfer to a roasting tin.
Crush each one with a masher, drizzle with the oil and sprinkle with the paprika and herbs. Bake for 25-30 minutes or until golden.
